Update fusion wiring, lights mappings and breakout cable

Fill in lights mappings. Yes, I tested these on my own cabinet
because I had to build a breakout cable to connect everything
to essentially any other hardware than the stock fusion PCB.

Breakout cable instructions and mappings also included as a
bonus, since this is likely the use-case one might be looking
for those pinouts.

Stage Fusion cabinet, you need a "breakout" adapter that splices
the JAMMA connector into the following separate connectors:
* `EHR-5` connector to COM1 on the PCB for the EXTIO
* +5V supply, likely via a 2-pin connector that works with your
cabinet's internal power infrastructure
* `XMP-11V` connector to PORT1 on the PCB for lights
